Pot Roast Leftovers – Part 1
Josh and I both love pot roast, and we make it on a regular basis. (I still wish I could make it as tender and moist as my Mom makes hers…but I’ll keep trying!) Whenever we make one, we have a lot left over. There are several different things that we like to do with our leftover beef, and I thought I’d share some of them in an ongoing series of posts.
One of our favorite things to make with our pot roast leftovers is Shredded BBQ Beef on buns.
What you’ll need:
- Leftover Roast Beef
- BBQ Sauce of your favorite flavor
- 1 or 2 Avocados, Peeled and Sliced
- 1/2 or whole White or Red Onion, Sliced
- Buns, toasted
- Pickle Slices and/or Spears (Optional)
It’s really simple to do:
Just reheat your leftover beef (cut or shred it into bite-sized pieces if it’s not already) on low heat in a pot on your stove. Don’t worry if there is still some residual gravy stuck to the beef…it’ll just make it more juicy and tender! Add as much BBQ sauce as you want (cover all the beef with it and make sure it looks moist), stir it up and let it sit on low heat for as long as it takes to get steaming hot. Meanwhile, toast your buns and slice your onions and avocados. Spread avocado and onion slices on toasted buns, and put heaping spoonfuls of steaming hot shredded bbq beef on the buns. (You can put pickle slices in your bun, too, if you want.)
Add a pickle spear and a handful of potato chips, and you’re good to go!
