Recipe: White Chocolate Lemon Muffins

 

 

This recipe uses the BASIC MUFFIN MIX. If you have that on hand, this batch of muffins will be super easy to whip up!

Ingredients:

  • 2 3/4 cups Basic Muffin Mix
  • 1/2 cup butter, melted
  • 1 egg
  • 1 cup 2% milk
  • 2 tsp lemon extract
  • 1 cup white chocolate chips
  • coarse or granulated sugar to sprinkle on top
  • (optional) edible glitter to sprinkle on top

Directions:

  1. Place 2-3/4 cups muffin mix and white chocolate chips in a large bowl; mix together.
  2. In a separate medium-sized bowl, whisk the egg, milk, lemon extract, and butter; stir into dry ingredients just until moistened.
  3. Fill paper-lined muffin cups three-fourths full. Sprinkle sugar on top of each muffin. If desired, also sprinkle edible glitter on top.
  4. Bake at 400° for 18-21 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.
