Recipe: Butter Mint Ice Cream
Butter Mint Ice Cream
INGREDIENTS:
- 2 cups heavy cream
- 1 (14 oz.) can sweetened condensed milk
- 1 tablespoon butter, melted
- 1/2 tsp vanilla extract
- 1/8 tsp peppermint oil flavor
- 5.5 oz. bag of butter mints, each cut in half
- 2 drops yellow food coloring
- 1/4 tsp lemon extract (OPTIONAL)
DIRECTIONS:
- In a large bowl, whisk sweetened condensed milk, butter, vanilla, peppermint oil, food coloring, and lemon extract (if using).
- Stir in halved butter mints. Mix well.
- In a separate large bowl, whip the heavy cream to stiff peaks.
- Fold whipped cream into milk mixture.
Pour into a large (2-quart) container and cover. Freeze 6 hours or until firm. Store in the freezer.
