Lime Tortilla Crusted Chicken with Homemade Salsa
INGREDIENTS FOR LIME TORTILLA CRUSTED CHICKEN:
- 2 chicken breasts
- 1 1/2 cups crushed Margaritaville Island Lime Tortilla Chips
- 1 cup orange-pineapple-banana juice (if you don’t have this blend, a similar one or just one of the three fruit juices will do)
- 2 tortillas, warmed (optional)
DIRECTIONS:
- Soak chicken breasts in 1 cup of orange-pineapple-banana juice for at least 5 minutes.
- Using rolling pin, crush tortilla chips in a sealed ziplock bag.
- Put chicken in the bag of crushed chips, shaking to coat.
- Place chicken breasts in frying pan on medium heat till browned and juices run clear (180 degrees).
INGREDIENTS FOR HOMEMADE SALSA: (I harvested these veggies, mint, and strawberries from our garden today and wanted to come up with a way to use them. Ignore the strawberries…they aren’t in this recipe!)
- 2 TB apple cider vinegar
- 1 TB ground cumin
- 1 TB onion powder
- 3 TB garlic powder
- 3 TB lime juice
- 3 TB lemon juice
- 2 TB orange-pineapple-banana juice (again, if you don’t have this blend, a similar one or just one of the three fruit juices will do)
- 1/2 bell pepper, chopped (I used green, but any color will do)
- 1 red onion, chopped
- 2 medium tomatoes, chopped
- 2 jalapeno peppers, seeded and diced (use gloves to prepare peppers!)
- 1 anaheim chili, seeded and diced
- 6 leaves from a sprig of fresh mint, chopped
DIRECTIONS:
- Combine all ingredients in a large frying pan.
- Saute and simmer on low heat until soft and blended.
- Remove chicken breasts from their frying pan and place on plates.
- Spoon homemade salsa over chicken breasts.
- If desired, serve with warmed tortillas on the side.
30 minutes preparation time. 30 minutes cooking time. Serves two.
